Brownie Cupcakes w/ M&M Frosting!

This idea came to me as I was trying to sleep. Sure, brownie cupcakes are pretty standard but M&M frosting? Not so much. 

And these are perfect for Valentine's Day. Especially if you use these:

This recipe is simple and delicious! I'm not the only one who thought so; I shared these with my roommate and she definitely agrees. 





Brownie Cupcakes
About 24 cupcakes

Ingredients:
1 box of brownie mix
3 large eggs
1/4 cup water
1/2 vegetable oil
1/2 12.6 oz bag of M&Ms (big bag)

1. Heat oven to 350° F. In each muffin cup, place a cupcake liner (approximately 24.) 
2. In a large bowl, mix brownie mix, 3 large eggs, 1/4 cup water, and 1/2 cup vegetable oil together. Once mixed, fold in half a bag of M&Ms.
3. Fill the liners 3/4 of the way full. Bake for 18-24 minutes (I baked mine for approx. 24 minutes) or until a toothpick inserted in the center of the cupcake comes out clean (or almost clean.) Let cool in pan. Frost with icing/frosting.


M&Ms Frosting

Ingredients:
1/2 12.6 oz bag of M&Ms (big bag)
1 cup butter (room temperature)
2 to 2 1/2 cup powdered sugar
1 teaspoon vanilla extract
1-3 tablespoons milk (as desired)
1/4 teaspoon shortening (optional)

1. Cream butter in large bowl until fluffy. Mix in 1/2 cup powdered sugar.
2. Add vanilla extract. Mix in rest of powdered sugar 1/2 cup at a time.
3. In a microwaveable bowl, pour 1/2 bag of M&Ms (what would be left over from brownies.) Microwave on high for 1 minute. Remove bowl from microwave and stir with metal spoon, crushing the M&M shells as you mix. Microwave for 30 seconds. Mix again. Continue until chocolate is melted, adding in 1/4 teaspoon shortening if chocolate gets more clumpy than melty (I added in the shortening.) 
4. Once M&Ms are melted, mix in with the rest of the ingredients until well combined. Add in milk 1 tablespoon at a time to reach desired consistency.
5. Once finished, frost cooled cupcakes.
